Step 1.
Chuck the peanuts into a food processor and blitz until they look like coarse flour.
Step 2.
Add the dates, peanut butter and a pinch of salt, then blend again until a sticky dough forms.
Step 3.
Break up the dark chocolate and tip into the mixture. Pulse a few more times to mix them through.
Step 4.
Press the mixture into a lined tray or mould, roughly 17cm x 24cm – it should be about 2 cm thick. Chill for 20–30 mins to firm up.
Step 5.
To store, wrap the bars in baking paper and chill or freeze until needed (these last for a week in the fridge and 3 months in the freezer).
