Every recipe Jodie Nixon puts up is a hit with me and this is no exception. Absolutely flipping' delicious! I could have drank the beetroot sauce straight out of the blender - it's insanely good! I used reduced fat creme fraiche and omitted the olive oil to try to lower the calories a bit. Received lots of enquiries for the recipe at work too as it looks as amazing as it tastes. Pretty quick to prepare and put together. This is the perfect summer lunch!
