Zingy & Fresh Creamy Courgette Carbonara
Step 1.
Place a saucepan of salted water on to the boil. Once boiling, cook the pasta until it's 1 min under al dente.
Step 2.
Trim and shave the courgette with a peeler until you get to the middle then thinly slice the centres. Finely slice the garlic.
Step 3.
Crack a whole egg into a bowl, add the separate yolks and whisk. Finely grate the Parmesan into the eggs and mix together with the chilli flakes.
Step 4.
Add the butter into a frying pan, place onto medium heat and let it melt. Stir fry the courgette centres and garlic, season with salt and cook until softened, 5-7 mins.
Step 5.
Using tongs, transfer the pasta straight from the water into the garlic with the courgette. Turn the heat up to medium-high, toss together until the courgette has just started to wilt, then turn the heat down to low. Add a splash of pasta water and the egg mixture. Toss until glossy and thickened. Zest half the lemon in, season with a squeeze of lemon juice and more salt. Add a splash of pasta water to loosen, if needed.
Step 6.
Share the pasta between bowls and top with more Parmesan.
