Step 1.
Preheat your oven to 180°C/160°C fan/gas mark 4. Grease a 20cm brownie tin or high-sided roasting tray with butter and line the base with baking paper.
Step 2.
Snap the dark chocolate into a microwaveable bowl, add the butter and a big pinch of salt. Zap in the microwave on high in 30-second bursts, stirring in between, until the butter and chocolate are completely melted. Set aside to cool slightly. Roughly chop the milk chocolate.
Step 3.
Measure the sugar into a large bowl. Crack in the eggs. Using an electric whisk, whisk the eggs and sugar together until they have almost doubled in size and are very light and fluffy.
Step 4.
Pour in the melted chocolate mixture and add the flour and cocoa powder. Whisk briefly until everything is combined.
Step 5.
Smooth half the brownie batter into your tin. Scatter over half the milk chocolate then scrape the rest of the batter over the top. Sprinkle over the remaining milk chocolate and a big pinch of sea salt. Bake for 30 mins or until the edges are set and the centre still has a good wobble.
Step 6.
Leave to cool then cut into 12 squares.
