Cooking and Freezing/Meal Prepping Chicken Kebabs:
For optimal meal prep, these chicken kebabs can be cooked in advance and stored in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months. When freezing, place them in a single layer on a baking sheet lined with parchment paper until solid, then transfer to an airtight container or freezer bag. To reheat, simply thaw overnight in the refrigerator if frozen, then microwave or reheat in the oven until heated through.
Skewering Chicken Kebabs:
When skewering the chicken, you can use either metal or wooden skewers. If using wooden skewers, soak them in water for at least 30 minutes before threading the chicken onto them. This prevents the skewers from burning during cooking. Thread the chicken onto the skewers, leaving a small space between each piece to ensure even cooking.
Removing Skewers/Covering in Foil/Soaking Skewers:
After cooking, carefully remove the chicken kebabs from the skewers using tongs or a fork. If serving immediately, you can cover the skewers loosely with foil to keep them warm while you prepare any accompanying dishes. If using wooden skewers, remember to soak them beforehand to prevent burning during cooking. Alternatively, you can cover the exposed ends of the skewers with foil to protect them from burning on the grill or in the oven.

Yes, you can cook chicken kebabs in an air fryer. While it won't replicate the exact grilling experience, an air fryer can yield deliciously crispy and juicy kebabs. To cook them, simply arrange the seasoned chicken on skewers, place them in the air fryer basket, and cook at around 190°C for approximately 12-15 minutes, flipping halfway through, until the chicken is cooked through and has a golden exterior. Adjust the time as needed based on the size of the chicken pieces and your air fryer's specific settings.
The answer to this question depends on how much you like chicken thighs. We’ve suggested chicken breasts in this recipe to keep things simple but if you prefer the flavour of a fattier meat like chicken thigh then, by all means, feel free to use them instead.
Absolutely! You can use meat-free alternatives such as tofu, seitan, tempeh, or a variety of vegetables to make vegetarian or vegan kebabs. Just marinate the alternative protein or vegetables in the same marinade recipe we’ve included above, skewer them, and cook the following similar instructions as for chicken kebabs, adjusting the cooking time as needed based on the ingredients used.
To prevent chicken kebabs from sticking to the grill or tray when cooking, there are several methods you can use. First, make sure the grill or tray is properly preheated and cleaned. A clean, well-oiled surface helps create a non-stick cooking environment. Before placing the chicken kebabs on the grill or tray, you can also brush them with oil or marinade, which adds flavour and creates a barrier between the chicken and the cooking surface. Another option is to use skewers that have been soaked in water for at least 30 minutes before threading the chicken onto them; this helps prevent the chicken from sticking to the skewers during cooking. Additionally, avoid moving the kebabs around too much while cooking, as this can cause them to stick.

Step 1.
Dice the chicken into bite-sized pieces and tip into a bowl. Sprinkle in the cumin seeds, dried mint and 1 tbsp olive oil and season really well with salt and cracked black pepper. Mix well then leave to marinate for at least 1 hour, but overnight would be great.
Step 2.
Make the tahini sauce by adding the tahini to a large bowl, half and squeeze in the juice of the lemon, peel and finely grate in the garlic and add a pinch of salt and pepper. Spoon in 1-2 tbsp of cold water and whisk to a smooth, drizzle-able sauce. It will thicken slightly as it sits, so bear this in mind.
Step 3.
Heat your BBQ or a griddle pan over a high heat. Carefully thread the chicken pieces onto 4 metal skewers and put onto a plate.
Step 4.
Lay the skewers straight onto the BBQ or into the griddle pan and cook for 4-5 minutes on each side until charred and cooked through.
Step 5.
Serve the chicken stuffed into pitta halves with sliced tomatoes, red onion, lettuce and crumbled feta,a good spoon of the tahini sauce and an extra sprinkle of dried mint.
