A bit of black pepper in a cheese toastie recipe already gives it a little extra excitement, but, assemble it inside out, and you form a zingy pepe cheese crisp. Stuff it with melty mozz and it goes bonkers.

Step 1.
Put the cracked black pepper into a pan set over a medium heat. Cook for 2-4 mins, stirring until fragrant and toasted – it should smell citrusy. Remove from the heat and let the pan cool down.
Step 2.
Meanwhile, finely grate the cheddar and Parmesan. Add both cheeses to the cooled pan and toss, evenly dispersing the pepper. Put the bread slices into the pan, on top of the cheese mixture. Cook over a medium heat for 2-3 mins, until the cheese has turned crisp and is golden-brown in colour.
Step 3.
Butter the outside of both slices of bread, then flip the cheese crisp so that it’s bread-side down. Scatter the mozzarella over one bread slice, then sandwich the two slices of bread together so that the mozzarella is in the middle.
Step 4.
Set the frying pan over a medium heat and cook the toastie for 3-5 mins until both sides are golden and the cheese has melted.
