Ratatouille & sausages. A match made in heaven. This is a ridiculously simple dish with minimal washing up.

Sausage Ratatouille Traybake

Heat the oven to 180°C. Roughly chop all your vegetables and chuck them in a baking tray.

Add the sausages, rosemary, bay leaves, tinned tomatoes and whole garlic clove to the tray. Mix everything together and get it in the oven for 45 mins.
Give it a check half way through, turning the sausages and veg so they get nicely browned all over.

Sprinkle over a bit more fresh rosemary to serve.
