Step 1.
Make the Coconut Dal batch recipe.
Step 2.
Toast your desiccated coconut in a dry frying pan over a medium heat for 2 mins, then tip it into a bowl.
Step 3.
Pop a box grater over the same bowl, and grate in the beetroot. Squeeze in the juice of a lime, then give it a really good mix. Season with salt to taste.
Step 4.
Heat your rice following packet instructions, then spoon it into bowls. Top it with your dal and beetroot sambal, and some extra coriander leaves if you like. Serve.
